Sushi is considered a delicacy, despite the fact, that it started as a fast food item in Japan due to the fact that it can be prepared so quickly. Sushi actually consists in vinegared rice , which is called shari that is combined with other types of ingredients such as seafood. Some people make confusions between sushi and sashimi. Which is raw fish that is served by itself, even though , sushi can be prepared with raw fish.

Nare-Sushi arose ago 1300 and it is supposed to have been a form of tax so historians are not sure if it was actually, a dish. It was only after year 800, when the discovery of rice vinegar, and other spices developed Japanese cuisine 2 in ways that promoted, sushi eating, .. The first type of sushi made was called nare-zushi and it was practically a piece of fish which was salted, wrapped and fermented in rice. It was a really good source of protein and a wonderful way to store meat for days in those times. Another type of fish, introduced during the Edo period, which was called, Haya Zushi. This combined rice and fish so that people can consume them at the same time and it’s quite similar to the sushi we know today (.) Also, rice wasn’t used for fermentation anymore. it was consumed either mixed with different substances, or with different vegetables, The good thing is that each region uses its own recipe. These have been passed from generation to generation, and can be tasted even today.

It was only in 1893 when a book describes the act of eating sushi in a western culture, and even more time passed until it became a mainstream dish. .
